Job Description

Location: Kigali, Rwanda (Open to expatriates)

Contract Duration: Permanent & Pensionable

JOB PURPOSE

The Bakery Production Manager is responsible for overseeing the day-to-day production activities within the bakery to ensure the efficient manufacture of high-quality baked products. The role ensures production targets are met on time, within budget, and in compliance with food safety, hygiene, and quality standards.

RESPONSIBILITIES

1. Production Planning and Control

  • Develop and implement daily, weekly, and monthly production schedules in line with sales forecasts and inventory requirements.
  • Coordinate raw material and packaging needs with the procurement and stores teams.
  • Monitor production output and adjust schedules as necessary to meet demand.

2. Quality Assurance and Food Safety

  • Ensure compliance with HACCP, GMP, and all relevant food safety regulations.
  • Maintain high product quality standards and consistency through effective quality control checks.
  • Liaise with the Quality Assurance team to address any deviations or non-conformities.

3. Team Management

  • Supervise, train, and motivate production staff to achieve departmental goals.
  • Develop work rosters and ensure adequate staffing across all shifts.
  • Conduct performance evaluations and recommend training or disciplinary action where necessary.

4. Process Optimization and Maintenance

  • Continuously evaluate production processes for efficiency improvements and cost savings.
  • Collaborate with the maintenance team to ensure all machinery and equipment are in optimal working condition.
  • Implement preventive maintenance schedules to reduce downtime.

5. Inventory and Cost Management

  • Monitor raw material usage and production yields to minimize waste.
  • Maintain accurate records of production, wastage, and batch reports.
  • Work with management to control production costs and optimize resource utilization.

6. Health, Safety, and Compliance

  • Enforce adherence to occupational health and safety standards.
  • Ensure employees use proper protective equipment and follow safety protocols.
  • Participate in audits and implement corrective actions promptly.

REQUIREMENTS

  • Diploma or Degree in Food Science, Food Technology, Production Management, or a related field.
  • Minimum of 5 years’ experience in bakery production management within a commercial or industrial bakery environment.
  • Strong understanding of baking processes, equipment, and quality control.
  • Knowledge of HACCP, GMP, and ISO standards.
  • Proficiency in MS Office and experience with ERP or production tracking systems is an added advantage.
