JOB PURPOSE
The Bakery Production Manager is responsible for overseeing the day-to-day production activities within the bakery to ensure the efficient manufacture of high-quality baked products. The role ensures production targets are met on time, within budget, and in compliance with food safety, hygiene, and quality standards.
RESPONSIBILITIES
1. Production Planning and Control
- Develop and implement daily, weekly, and monthly production schedules in line with sales forecasts and inventory requirements.
- Coordinate raw material and packaging needs with the procurement and stores teams.
- Monitor production output and adjust schedules as necessary to meet demand.
2. Quality Assurance and Food Safety
- Ensure compliance with HACCP, GMP, and all relevant food safety regulations.
- Maintain high product quality standards and consistency through effective quality control checks.
- Liaise with the Quality Assurance team to address any deviations or non-conformities.
3. Team Management
- Supervise, train, and motivate production staff to achieve departmental goals.
- Develop work rosters and ensure adequate staffing across all shifts.
- Conduct performance evaluations and recommend training or disciplinary action where necessary.
4. Process Optimization and Maintenance
- Continuously evaluate production processes for efficiency improvements and cost savings.
- Collaborate with the maintenance team to ensure all machinery and equipment are in optimal working condition.
- Implement preventive maintenance schedules to reduce downtime.
5. Inventory and Cost Management
- Monitor raw material usage and production yields to minimize waste.
- Maintain accurate records of production, wastage, and batch reports.
- Work with management to control production costs and optimize resource utilization.
6. Health, Safety, and Compliance
- Enforce adherence to occupational health and safety standards.
- Ensure employees use proper protective equipment and follow safety protocols.
- Participate in audits and implement corrective actions promptly.
REQUIREMENTS
- Diploma or Degree in Food Science, Food Technology, Production Management, or a related field.
- Minimum of 5 years’ experience in bakery production management within a commercial or industrial bakery environment.
- Strong understanding of baking processes, equipment, and quality control.
- Knowledge of HACCP, GMP, and ISO standards.
- Proficiency in MS Office and experience with ERP or production tracking systems is an added advantage.
